Tortilla Española

serves 2

2 onions (1 lg, 1 sm, or 2 med)
4 potatoes, peeled and sliced
6 eggs
1 T. milk
1 T. baking powder
oil

Fill 12"skillet 1/3 full of oil. Meanwhile cut onions and pot into small pieces. When oil is hot, add pot. and onion mixture.

Cook for 20 min. stirring a few times, or until potatoes are soft.

Meanwhile, mix eggs, baking powder and milk.

After potatoes are soft, strain the oil. Mix eggs with potatoes and onions and pour in the pan. Wait a few minutes, flip over using a big plate and cover.

After a few minutes, cover with the plate and flip over onto the plate.
