1 lb. ground beef
1 (1-lb) can kidney beans, drained
1 (15 oz) can enchilada sauce
1 (8oz) can tomato sauce
1 T. onion (instant)
1 (6oz) pkg corn chips
1 c. (4 oz) chunked cheddar cheese
1/2-3/4 c. sour cream
Brown g. beef in skillet, add beans, enchilada sauce and onion. Mix 1 c. corn chips and 1/4-1/2 c. cheese. Add remaining cheese and corn chips to meat/bean mixture. Stir to blend. Pour into 2 qt. casserole. Bake covered at 375 for 20-25 minutes. Spread with sour cream, sprinkle with cheese. Top with crushed remaining chips around edge of casserole. Return to oven 3-4 minutes.
